Reports on Isidore Geoffroy Saint-Hilaire's lecture in which the naturalist recommended 'the use of horseflesh for food'. Notes that Geoffroy's examples of cultures which thrived on such food could have included London medical students and present-day Germans, and that if horseflesh replaces beef as the staple diet of the English then the 'staple will become stable'.
